Gluten free pizza tends to be expensive, particularly if you're purchasing your crusts ready made. I came across gluten free corn tortillas in the grocery store the other day and thought that less than $4 for a bag of *80* tortillas was a great deal and worth the money for an experiment. Results? Absolutely delicious! Here you go:
Guerrero tortillas de maiz blanco
Pizza sauce, gluten free
Sliced provolone or shredded cheese
Toppings of your choice
Adobo seasoning (optional)
Preheat oven to 425 degrees. Place desired amount of tortillas on greased cookie sheet. Place in oven for 1-2 minutes as it's heating. Then remove from oven. Spread tortillas with sauce and add cheese and desired toppings. Sprinkle with Adobo if desired. Return to fully heated oven and bake for 10-15 minutes until desired crispness is reached. Remove pan from oven. Use turner to IMMEDIATELY fold pizzas into tacos. Slide tacos onto plate and enjoy!
